- Ingredients
- 1 cup black beans
- 1 onion
- 4 tomatoes
- 4 stalks celery
- 1 squash
- 2 carrots
- 1/2 bell pepper
- 1/2lb spinach
- 1 jalapeno or 1/4cup chili flakes
- 4-5 cups water
- 1tbsp olive oil
- Preparation
- Wash and start cooking beans in olive oil and water
- While beans are cooking, cut or chop all vegetables
- When beans are soft, add onion, celery and carrots
- Once soft, add remaining vegetables and chilli flakes/jalapeno along with salt, pepper, chili flakes/jalapeno and ginger to taste
- Let cook until soft then simmer until water is bubbling
- Makes 5-6 servings
